Allow me to elaborate. What I mean when I refer to a part as something you "mount and forget about" is that it is so reliable and requires so little maintenance, that you forget it's even there. These are parts that you know will almost never fail you and that you trust your life with. I figure, why not make a list of these parts as kind of a quick reference guide?

Rules:
*Only add parts that you have personally used, no "I've heard these are great!"
*3 strikes and you're out. Either 3 eyewitness accounts or 3 pictures of the part, broken renders it out of the list... Let's see how many truly great parts there are!
*Stuff that wears (eg tires, grips) may be included if you feel you get more than your money's worth by the time they're dead
*Follow the posting guidelines

I'll start:

Chris King headsets
Salsa Flipoff skewers
Easton EA 70 bars

Update:
Thomson Stems and Posts
Mavic Rims (there's been a few names floating around)
Saint cranks
MTX
Straitline
Goodridge hosing
FSA Pig/Pig DH Pro
RockShox Pike
Hope Pro 2's
Hope brakes

The X-Type system has its flaws or at least the first generation Race Face cranks with the X-Type system did. These cranks tend to get "loose" after a few rides because the cap is only a self extractor and does nothing to hold the system together.

Thomson X4 Stem
EA70 Bars, even though I'd like something a bit wider
Hussefelt cranks- I know they loosen for a lot of people but for me they've been perfect.
MTX rims

ISIS BBs... not
