if a 10mm axle won't fit in the 3/8" dropout, it's more than likely due to paint, 0.5mm is incredibly small

You run the axle that your hub requires. An MTB rear hub will be 10mm axle X 135mm spacing . A BMX hub is 3/8" axle X 110 spacing.

A 3/8 (9.52mm) axle nut won't thread on to a 10mm axle.

The Profile website says: "PRODUCT DETAILS
Classic Profile MTB Single Speed hub, now with a 10mm bolt on Female-style axle."

http://www.profileracing.com/estore/product.php?productId=158

Maybe they did used to use 3/8" axle in the mtb hub, like in the bmx hubs.

You'll be fine. I've got a Deity frame and I run a hub with 3/8" bolts. It's completely okay.
