should i just apply the stripper for 30min and use a pressure washer then leave it as is to achieve this look?

Ya use the stripper then steel wool to get that look.
The polish will give it the chrome look, but if you don't want that, just stop after steel wool.
It's an easier look to keep as well. If it starts to dull, just hit it quickly with steel wool for a few minutes. As opposed to a few hours with polish.
It will take more than just one coat of stripper though. Usually it's 3-4 to get it out of all the nooks and crannies. I usually apply a coat, wait 10 minutes, then hit it with a pressure nozzle (pressure washer will probably work better). Just do one section of frame at a time.

That's why you'd have to polish or, in your case, hit it with steel wool every so often.

Here is my raw GT Moto, still need to clear coat it. Forks at 120 in some pictures and 140 in others what do you think, full build photos still to come.

Finally sanded down the bike the forks are at one 120 in this photo
