So my dad retired from police work a few years ago. He was in the bike squad and also an instructor. He recently had to have a heart stent and needs to get back in shape lol. He got his old bike out of storage and I picked it up to clean up and update it for him. Totally forgot to take a pic before I started but my son and I started pulling everything off. I got new tubes and tires, new handlebars and stem and grips also. I need to figure out a cheap 1x crankset still. I also want to upgrade to hydraulic brakes but the cable clips built into the frame aren’t large enough for brake hose lines so not sure what to do there. My last issue is the old Judy fork. Any resources on how to service it?

For the brake hose routing, you might want something like the Problem Solvers Housing Guides, part BR4115. They clamp onto a cable stop with a clip that holds onto a hydraulic hose.
