I have a 2013 Trek X caliber 8 I’m trying to convert from a 3x to a 1x . At the moment I removed all chainring gears except the single gear I re bolted . Changed the cassette out to a 10 speed. Problem I’m having is in the smallest cog the chain tools off of front gear. But if I shift up the chain stays and runs smooth. Do I need a different off set chainring ?

Best practice for a 1x setup is to use a narrow-wide chainring. Your 3x chainrings almost certainly are ramped & pinned--features designed to help the chain move to the adjacent ring. Since that ring is now gone, all the ramps and pins can do is help the chain fall off.

You might be able to cheat it by moving the chainring to the outermost position--I'm guessing you just left the middle ring in the middle position?
