I FOUND IT!! The reason why this happens is because apparently the fork manufacturer designed our forks originally to fit 160mm rotors (without an adapter). When building your bike they must have put an adapter to fit a 180mm rotors on hence your bike coming with a 180mm rotor already. We went with the 180mm to 203mm adapter when we should have gone with the 160mm to 203mm adapter. This is the item part number according to SHIMANO ISMMAF203PPA.
