 I grew up beside an Italian family who always hung prosciutto and other meats in their cold cellar., as kids we would shave pieces off with our folding knives and just dig in.

 That sounds like a great place to live! The back roll is pancetta, The hunk of meat to the left is a ham. the one to the right is a dry aged Prime Rib at about 45 days.
