What true medium rare should look like - pink inside but charred outside and hot enough to melt fat, for maximum beef goodness.  Why can't paid chefs at "Steakhouse(s)" cook steaks properly when I can?  

I'm sick and tired of being served overcooked chewy pieces of leather when I order my steaks bloody rare.
