I made it for the whole family (almost 30 people) when we were on vacation back in June for our "dinner night". I used dried Chorizo and "fresh off the boat" N. Carolina shrimp. Got that nice socarrat on the bottom too. Had to make it in one of those huge ass turkey pans. I used the biggest foil pan I could find. lol What little was left over the next morning was getting warmed up with a fried egg over-easy on top....

This picture had kielbasa 'cause I could not f**king find Chorizo.

 @Twenty6ers4life: yeah, there's some good recipes out there. I can do it from scratch but sometimes it's nice to have a recipe to back up what you are trying to achieve.

This was the basis for the big dinner I did down in during vaca. (and we were in S. Carolina not North....just noticed my error....)
