could all the pins be removed on one side of the pedal without causing any other problems?

Yeah. I did that for a while, it worked fine. The pins screw into recessed nuts so you can take it all out, grind on it, and put it back on no problem.

Honestly, best pedals I've ever had. Pins are threaded into a metal nut so I still have all of them. Really thin too, which is probably the most important aspect of a pedal in terms of performance.

I got the red ones, seem nice just haven't actually been out on them yet
