how do you adjust the chain tension?

by changing the rear cog up or down by 1 tooth increments

That sounds like a horrible system, and expensive if you like buying a lot of cogs...

not really, single speed cogs do not have to be replaced very often. And its really easy to find a good ratio with a half link chain.
