Dude.
I don't know how old you are but I'm probably older and I enjoy Trials riding.
I'll tell you this... I will never expect to be as good as some of the more skilled riders on trials and sure it would have been nice to start when we were younger.. BUT....
Riding trials even at any level is awesome exersice...
Last summer I just started and I rode the trials MOD bike more than my mountian bike and I sweat my ass off.
It's really fun and it's probably 5 times more of a workout than riding any mountain bike around the trails.
If I were you I'd just face the fact that your not going be as good as you'd like because of your age (like me) but do what you can and enjoy the balance aspect and smaller jumps you can do on it!
Keep in mind that trials riding isn't mainly about flying the bike across those huge gaps like you see in all those video's on youtube...it's about balance and dexterity.
Hope that makes you think twice cuz theirs no such thing as to old to ride any type of bike.
Just look on youtube for the guy who is 50 and has videos that are labelled "when I grow up I want to be a trials rider"...this guy is doing competitions

If yer still having probs I suggest also to do the basics. They are boring ... real boring but when you master them you will find other moves much smoother and easier.
ie: Trackstand, Rocking, Hops.
It took me like forever to get them down decently and now rear wheel hops are way more controlled I still work on them often when setting up for other moves.

Hmm. V brakes? I know you can get trial specific pads for V's now which is good though I'm not sure how they would be at the lever end.
If not I guess you could ditch em and get Mags or Echo's or go disc which I see a lot in Europe are going disc/disc both front and back now.
Less issues with grinding I guess.
