it's pretty simple. you ride in some dirt and the rubber gets dirt on it. they get a little darker, but when you ride on pavement for long enough, the tires wear, and the dirty rubber literally falls off in very small amounts. this is how a tire wears over time. with the dirty rubber basically peeled off, it exposes clean, white rubber underneath
