It's a pity you didn't have Jessie on for the bike shop service discussions to provide a female perspective. It's getting better but some shops could still improve based my better half's experiences
I've also had to personally check myself in terms of accepting recommendations and advice from female shop staff (guilty as charged)

Custom built Stans Crest 26"
$400 CADUpgrade juniors ride with some custom built Stans Crest mk4 wheels.
Boost hubs front and rear.
Sapim race spokes.
Front is laced to a SRAM 900 hub whilst rear is a 746.
XD driver. I can throw in a used GX cassette if desired.
Tubeless compatible.
Used for 2 seasons before child grew out of the bike.
Weight of both is ~1600grams so a big upgrade over OEM wheels
