 Weirdly enough, while I manage to do stuff like wheel and crow, I can't get myself to fully extend my legs nor to touch the ground with my heels in that position.

The stretch imposed here is way beyond what my hamstrings can go :\.

 That's ok. We all have different areas of strength and of flexibility. In Downward Dog, walk out your feet gently to increase your flexibility over time. It is not something you can rush. My flexibility in some poses is horrible!

 Sounds reassuring, thanks for the tip! Oh and thanks for bringing us these awesome videos, those exercises definitely make up for a nice addition to a MTB focused strength training program.
