Giant's First Flat Pedal Shoe & Updated Footwear Collection - Sea Otter 2019
My (limited) understanding is that flat pedal shoes do not need to be stiff as the pedal area is larger and most riders have a mid-sole position which provides both better grip and lets your foot flex around the pedal a bit. Also, I suspect 'flexy' is relative and probably stiffer than a pair of vans but less stiff than carbon soled road shoes.

27.2 isn't 'hokey' for bikes that aren't going to use a dropper. Smaller diameter makes it easier for seatpost to flex and give some amount of 'comfort'

For the water/thirst issue, I've found that chewing gum makes me drink less water. I still drink more than I need but it helps!

@wda1wustl: Take a bike tube by itself and start pumping it up. The inner diameter will grow. Same thing with this insert but instead of growing with more internal pressure, it'll shrink with external pressure.
