DOT4 or 5.1 brake fluids are hygroscopic, meaning they absorb moisture from the air and keep the water dissolved throughout the fluid. This prevents water from forming separate pockets that could boil at 100 °C or cause localized corrosion. Mineral oils are hydrophobic, meaning they repel water; any moisture entering the system can separate and collect in low points (bottom of caliper that gets at highest temp), increasing the risk of vapor lock during heavy braking.
