how do you get the colour like that at 2:46?

Well there are plenty of factors that may affect the final colour of the footage so it's almost impossible to tell what to do in order to get that particular effect. I can tell you tho that I usually make blacks and whites bit washed out and I add some blueish or yellowish tint. I recommend playing with curves. It gives unbelievable results.
