@kiksy: I get 2/3 chains per cassette as long as I don't let the chain stretch past 75% really depends on the conditions - I was fortunate to work in a shop so easy to stay on top of maintenance.

I love Chifa but always go to the same places I know tho when touring I would go to a place if it was jammin' busy and order what everyone else is getting . . . bacterial dysentery is really no fun. Peruvian food period is great - I could sure go for papas huancaina right now!

I've been riding/climbing in Peru for over 30 years and Cusco is certainly the most popular and Machu Picchu is incredible, however the biggest mountains are around Huaraz in the Cordillera Blanca. Plus the neighboring Cordillera Negra (also Huaraz) offers 14,000 feet of vertical to the Pacific with unlimited and unexplored ride potential. I've always liked Huaraz because it is less touristy, oriented to mountaineering, and you can do things like ride the Inca Royal Road where you are guaranteed to see no one for days outside of Quechua speaking locals or ride over 17,000' passes on single track. I can't say enough good things about Peru from people to landscape to food and encourage all to go - after recently riding the length of North and South America I wondered if I would come to regret spending so many years going to Peru . . . nope can't wait to go back! https://www.chakinaniperu.com/peru/
